Hoi An at the Shangri-La Hotel has been one of Dubai's most refined Vietnamese restaurants for many years, a beautifully lacquered space that channels the ancient trading port after which it is named. The menu spans the full breadth of Vietnamese regional cooking - crispy Saigon spring rolls, pho in rich bone broth, bánh mì crafted with house-baked bread, and whole sea bass in lemongrass. Service is unhurried and expert.
